Patrick Gayler
Rooted in the Okanagan

Patrick Gayler, Executive Chef at Mission Hill Family Estate since 2014, focuses on ingredients from the Okanagan Valley. His menus are rooted in seasonality and relationships with the region’s farmers, growers, and producers. Under his leadership, Mission Hill’s Terrace Restaurant has gained recognition as a winery dining destination, being named one of the world’s five best winery restaurants by Travel + Leisure magazine.
Vaishnav Mayekar
A Global Culinary Perspective

Joining him is Vaishnav Mayekar, Chef-Owner of Vancouver restaurant Elem, where the elements of earth, air, fire, and water guide the culinary experience. Since opening in 2024, Elem has received Michelin recognition and national awards. Mayekar draws inspiration from his Mumbai roots and experience in Italian kitchens to create cuisine influenced by multiple culinary traditions. His career also includes appearances on Top Chef Canada, work at the Cannes Film Festival, and participation on Canada’s National Culinary Team.
Lucas Trahan
Precision, Seasonality, and Technique

Completing the trio is Lucas Trahan, Chef de Cuisine at Chicago’s Ever, which earned its second Michelin star in 2022. Trahan is recognized for a vegetable-focused approach, combining technical precision with seasonal ingredients. Before stepping into his current role, Trahan served as the restaurant’s pastry chef for three years and is a recipient of the StarChefs Rising Star Pastry Chef award.
