In a departure from the usual (because we can), this time around Vine Dining is about much more than one of Toronto's newest destination restaurants. Verity, an exclusive women's club, is a luxurious sanctuary that offers its female members a third space (after work and family) to nurture themselves. This retreat has it all, including a restaurant. George was named in part to honour the female author who used George Sands as a pseudonym.

Founder and CEO Mary Aitken has created a place for members that combines state of the art business facilities with a fitness centre, yoga studio, wellness counselling, spa and pool area, cozy library and private lounge, all under one roof. There's even an on-site concierge to tend to your every need. This oasis in the heart fo the city also houses four hotel suites for members and their guests, taking the boutique hotel concept to the next level. (In short, TN is sold!)

Part of a 45,000 square foot 19th Century Compound, Verity is a place for women to gather and rejuvenate. For the powerhouse Aitken, it's her dream come true. Not satisfied with only catering to women's bodies and souls, Verity also offers a regular series of adventures for the mind: forums on community, world affairs, music and a host of other provocative issues.

George is the latest addition to this growing concern. Slated to open to the public in September, TN chatted with Executive Chef Lorenzo Loseto (ex-Rain/Zoom/Bacchus) about his plans for the menu and the restaurant. Regional Canadian Cuisine will be showcased as much as possible according to Loseto, but there will also be international delights to tempt the palate. The food will be simply presented, yet it will have layered flavours. Loseto is currently developing an à-la-carte tasting menu to wow patrons as well. While the menu has not been set in stone, you should plan on paying up to $180 for a typical three course meal for two with wine.

Open for dinners initially from Tuesday through Saturday, the goal is to expand service to include lunch as soon as possible.

The wine list is being developed and overseen by Vancouver native and sommelier Kim Cyr, part of the grand opening team for that city's much lauded "C" Restaurant. For Cyr, half-bottles are an important and unique part of George's wine list. Showcasing the classic varietals will also be key, but that doesn't mean there won't be some surprises. While she'll buy the world, you'll also find treasures from home proudly featured on her list. George will seat between 80-100 people. There will be room for an additional 60 guests on the seasonal outdoor patio. The restaurant's décor is the brainchild of designer Lesley Macmillan. The project's architect is Harvey Cowan. Macmillan paired the natural light from the outdoor garden and the windows facing Queen Street East with bold, sophisticated colour. Soft lighting rains down from elaborate zinc and gold leaf chandeliers, highlighting antique wrought iron details throughout the space.
